This week’s Pinterest Challenge is in the form of a recipe from my “Yum” board. The boyfriend and I had a 3 hour window for date night this week and decided to eat in rather than go out. The boyfriend is on a low carb diet so I had pinned a few recipes. This one in particular looked really tasty! It is from a lovely little blog called The Organic Kitchen.
I had a small window of time and this was one of the easiest things I have made in a while! The recipe was easy to follow and there was very little mess.
I used 2 chicken breasts and cut them in half to make 4 smaller pieces. I laid them in between 2 pieces of plastic wrap and pounded them until they were thin and seasoned them with a little salt, pepper and garlic powder.
Don’t you just love my vintage looking cutting board! I show it off as often as I can!
Next up, I added the goat cheese. It is a lot easier to spread when it is room temperature.
Next up is the chopped fresh spinach. I love how fresh and colorful this is!
I rolled them up and placed them with the seam side down on my parchment paper covered baking sheet. I threw them in the oven while I got started on the awesome cream sauce!
The cream sauce was super simple and such a fresh addition to the chicken.
I started out with the butter in my pan and added the flour. Once it was mixed, I added the heavy cream. I was trying to make the best use of the few hours I had at my house so I tried to get a few dishes done while the cream sauce was heating up.
Tip – Do not do dishes while you are making your cream sauce! I almost lost it! It was just about to start to brown when I turned around and scooped it off of the heat! I quickly added the fresh dill, the capers and the salt and pepper. I am so glad I caught this in time because it tasted absolutely fantastic!
When my chicken was almost done cooking, I added the asparagus to the baking sheet. Before I put it in, I drizzled it with some olive oil, salt, pepper and garlic powder.
I strayed away from the recipe slightly. The chicken was cooked but the asparagus wasn’t quite cooked enough for me. I took the chicken out and broiled the asparagus for a few minutes. I don’t recommend this. I don’t have a lot of experience with parchment paper but it is paper – meaning it burns. I almost lost my asparagus too! But thankfully the oil that was on the parchment paper stopped it from burning where the asparagus was.
I was so proud of this and it was so good! A Pinterest Win for sure! I have to admit, I bragged about how good it was the entire time we were eating it. I will absolutely be making this again.
